All the cozy flavors of apple pie wrapped up in a crispy, golden rice paper roll. A drizzle of almond butter and a dusting of confectioners’ sugar make these a decadent dessert or snack.
Ingredients
- 3 medium apples, peeled, cored and diced (about 3 cups)
- 2 Tbsp. granulated sugar
- 1 tsp. ground cinnamon
- ¼ tsp. ground nutmeg
- 16 rice paper wrappers
- ⅓ cup almond butter
- Cooking spray
- ¼ cup sliced almonds
- 1- 2 Tbsp. confectioners' sugar
Steps
- In a medium saucepan over medium, combine apples, granulated sugar, cinnamon, nutmeg, a pinch of salt and ¼ cup water. Cook until apples are tender and the mixture is jammy, 12–14 minutes, stirring occasionally.
- Fill a pie plate or shallow dish with warm water. Working with one rice paper wrapper at a time, soak in water until just pliable, 5–10 seconds. Let excess water drip off and spread out wrapper on a cutting board.
- To a microwave-safe bowl, add almond butter and microwave 20 seconds. Working quickly, drizzle 2 teaspoons almond butter across wrapper. Add about 2–3 tablespoons apple compote in a strip across the center. Fold in the sides of wrapper, then roll up tightly. Soak a second rice paper wrapper and double-wrap the roll the same way. Repeat with remaining ingredients.
- Coat both sides of each roll lightly with cooking spray. In batches, air-fry at 350°F for 6 minutes. Flip rolls over and air-fry until golden and crisp, another 6–8 minutes. Sprinkle tops with almonds and dust lightly with confectioners’ sugar.
