Tender beef tips and carrots cook effortlessly in the Instant Pot® with a rich, savory gravy. The sour cream stirred in at the end gives the gravy an irresistibly silky finish.
Ingredients
- 2 lbs. beef sirloin tips
- ¼ cup all-purpose flour
- 2 Tbsp. vegetable oil
- 2 Tbsp. tomato paste
- 1 Tbsp. Worcestershire sauce
- 1 tsp. dried thyme
- 1 cup low-sodium beef broth
- 1 (12 - oz) pkg. baby carrots
- ½ cup light sour cream
- Chopped parsley, to serve
Steps
- Pat steak tips dry. If needed, cut beef tips into 1-inch chunks, then toss with flour, salt and pepper. In an Instant Pot®, heat oil on sauté function on high. Add beef to pot. Cook until golden brown, searing on all sides, 6–7 minutes.
- To Instant Pot®, stir in tomato paste, Worcestershire sauce and thyme. Cook 30 seconds–1 minute, stirring constantly. Add broth, scraping up any browned bits with a wooden spoon. Turn off sauté function and add carrots.
- Lock the lid and close the pressure release valve. Set Instant Pot® to high pressure. Cook 25 minutes, then let naturally release for 10 minutes. Manually release remaining pressure. Stir in sour cream. Season with salt and pepper. Garnish with parsley to serve.
