In this crowd-pleasing dinner, savory seasoned beef cooks low and slow with salsa and lime juice before getting layered with beans, corn, chips and melty cheese. Finished with all your favorite toppings, it’s a scoopable meal perfect for game day and beyond.
Ingredients
- 1 ¼ lb. 90% lean ground beef
- 1 (1 - oz.) packet Nature's Promise® Taco Seasoning Mix
- 2 Tbsp. lime juice
- 1 (16 - oz.) jar mild thick & chunky salsa
- 1 (15.5 - oz.) can black beans, drained and rinsed
- 1 cup frozen corn
- ½ (13 - oz.) bag restaurant-style tortilla chips
- 1 (8 - oz.) bag shredded Mexican-style cheese blend, divided
- FAGE ® Sour Cream, guacamole, chopped cilantro and pico de gallo, for topping
Steps
- To a 6-qt. slow cooker, add ground beef and break meat up into small pieces so that it cooks evenly. Add taco seasoning, lime juice and salsa. Stir to evenly coat beef. Cover and cook on high 2 hours or low 4 hours.
- To slow cooker, add beans, corn, chips and half of shredded cheese. Stir mixture gently, taking care not to break up chips too much. Top with remaining half of cheese.
- Cover and cook on high until cheese is melted, 15–20 minutes. Top casserole with sour cream, guacamole, cilantro, pico de gallo and other toppings, as desired.
