Crisp grilled pitas are topped with juicy chicken sausage, charred zucchini and fresh tomatoes for a fast, customizable weeknight dinner packed with smoky flavor.
Ingredients
- 1 medium zucchini, halved
- Olive oil, for brushing
- 3 fully cooked chicken sausages
- 1 (11 - oz.) pkg. pita bread (4-ct.)
- 1 (8 - oz.) pkg. shredded mozzarella cheese, divided
- ½ small red onion, thinly sliced
- 1 cup grape tomatoes, halved
Steps
- Set grill to medium-high and grease grill grates. Brush zucchini halves with oil and season with salt and pepper. Place zucchini cut-sides down on grill along with sausages. Grill zucchini until slightly charred and tender, 3–4 minutes per side. Grill sausages until nicely grill-marked and warmed through, 4–5 minutes per side. Slice zucchini into half-moons. Slice sausages into rounds.
- Lightly brush both sides of pitas with oil. Grill until lightly crisp, about 1 minute per side. Remove pitas from grill and sprinkle each with ⅓ cup mozzarella. Top with zucchini, sausage, onion and tomatoes. Top with remaining mozzarella, dividing evenly among pitas.
- Reduce grill to medium. Place assembled pitas back on grill. Close lid and cook until cheese is melted and bottoms of pitas are golden and crisp, 3–4 minutes, watching closely to prevent burning. Slice pitas into halves or quarters to serve.
