Upgrade your leftovers game with this sweet and savory riff on a Monte Cristo, which sandwiches ham and Swiss cheese between two slices of cinnamon raisin bread.
Ingredients
- 2 Tbsp. Dijon mustard
- 1 Tbsp. maple syrup
- 8 slices cinnamon raisin bread
- 8 slices Swiss cheese
- 2 cups sliced leftover ham
- 4 large eggs
- 2 Tbsp. unsalted butter
Steps
- Stir mustard and syrup together in a small bowl and spread onto one side of each bread slice. Place a slice of cheese on each of four slices of bread, followed by ham and remaining cheese. Set remaining bread slices on top, maple-mustard side down.
- Beat eggs in a large bowl. Working with one sandwich at a time, submerge sandwiches in beaten eggs and let sit 30 seconds; transfer to a platter or baking sheet.
- Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add two sandwiches to skillet and cook, turning once or twice, until outsides are golden and cheese has melted, about 2 minutes per side. (If cheese isn't fully melted, cover skillet and cook 30 more seconds.) Repeat with remaining butter and sandwiches and serve immediately.
Variations
If you're not using leftover ham, swap in eight slices of smoked deli-cut ham instead.
