Simmering in milk makes the chicken thighs and sweet potatoes in this simple main wonderfully tender.
Ingredients
- 1 ½ lbs chicken thighs, deboned and skin removed
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 2 cloves garlic
- ½ lb sweet potatoes, peeled and cut into 1-inch chunks
- 1 ½ cups chicken broth
- 2 cups low-fat milk
- 1 tbsp honey
- Naan bread, to serve
Steps
- Place chicken in a medium bowl. Add oil and season with salt and pepper. Toss to coat.
- Melt butter in a large pot over medium-high. Add chicken and sear on both sides until browned, 2 to 3 minutes. Add garlic and cook until fragrant, about 1 minute, then add sweet potatoes and a pinch of salt.
- Reduce heat to low. To pot, add broth and milk and bring to a simmer. Once simmering, add honey. Season mixture with salt and pepper. Simmer, partially covered, until sweet potatoes are tender and chicken is cooked through, stirring occasionally, 20 to 30 minutes. Serve with naan.
