This easy, vegan recipe has all the flavor and feeling of eating ribs with just 5 ingredients. Try this delicious summer dinner for your next cookout or barbecue.
Ingredients
- 2 ears corn, husked
- 1 tbsp olive oil
- ¼ cup barbecue sauce
- ½ tsp ground cumin
- ½ tsp cayenne pepper
- 1 tbsp vegan mayonnaise, to serve (optional)
To Serve (optional):
- Chopped cilantro
- Chopped green onions
- Lime wedges
Steps
- Preheat air fryer to 400°F. With a large sharp knife, slice corncobs in half lengthwise. Cut each half lengthwise again to get 8 sets of "ribs".
- In a small bowl, combine the oil, barbecue sauce, cumin, and cayenne. Brush sauce all over corn. Air fry 10 min., until corn is tender, in batches if needed.
- Transfer corn to a platter and drizzle with the vegan mayonnaise, if desired. Garnish with the cilantro, green onions, and lime wedges, if desired. Serve immediately.
