Warm curry spices and fresh ginger give flaky white fish a bold kick. Roasted with sweet peppers and red onion, it’s a vibrant one-pan dinner that comes together with minimal effort.
Ingredients
- 1 lb. mini sweet peppers
- 1 small red onion, cut into thin wedges
- 3 Tbsp. olive oil, divided
- 1 Tbsp. curry powder
- 1 (1 - inch) piece fresh ginger, peeled and finely grated
- 1 ½ lbs. white fish fillets, such as cod, halibut or haddock
- 3 Tbsp. chopped fresh cilantro, to garnish
Steps
- Preheat oven to 425°F. Toss sweet peppers and onion with 2 tablespoons oil. Season with pinch of salt. Spread out on large baking sheet. Roast 15 minutes.
- Meanwhile, in a medium bowl, combine curry powder, ginger and remaining 1 tablespoon oil. Season with ¼ teaspoon each salt and pepper. Rub all over fish.
- Arrange fish on baking sheet between vegetables. Roast until fish is cooked through, 12–15 minutes. Garnish with cilantro before serving.
