In this simple one-pan dinner, gnocchi bakes until golden and lightly crisp alongside juicy tomatoes and broccoli. Creamy feta and a drizzle of honey bring everything together to create a delicious mix of savory, salty and sweet.
Ingredients
- 1 (16 - oz.) pkg. Taste of Inspirations® Potato Gnocchi
- 1 lb. cherry tomatoes
- 2 cups broccoli florets
- ¼ (7 - oz.) tub feta in brine, drained
- 2 Tbsp. olive oil
- 1 tsp. dried oregano
- ½ tsp. crushed red pepper
- 1 - 2 tsp. honey, plus more to drizzle
- Fresh basil or parsley, to garnish
Steps
- Preheat oven to 425°F. Line a large rimmed baking sheet with parchment. Spread gnocchi, tomatoes and broccoli in a single layer, leaving a small space in the center.
- Place feta in the center of baking sheet and drizzle oil over top. Sprinkle feta with oregano and crushed red pepper. Season with salt and pepper and drizzle honey over top.
- Bake until tomatoes are soft and begin to burst and broccoli is browned around edges, 18–20 minutes. Remove from oven. Using a spatula or fork, smash feta and gently toss with gnocchi and vegetables to evenly coat. Drizzle with more honey and garnish with fresh herbs, if desired.
