This tropical treat comes together with just 5 ingredients and a few minutes of prep. It's perfect for an easy, make-ahead breakfast or a midday snack.
Ingredients
- 2 (12 - oz.) bags Nature's Promise ® Organic Frozen Mango Chunks
- 1 (13 - oz.) can lite coconut milk
- ⅓ cup chia seeds
- 1 tsp. pure vanilla extract
- 4 Tbsp. unsweetened flaked coconut or coconut chips
Steps
- Reserve and refrigerate ½ cup mango chunks. To a blender, add the coconut milk, ½ cup water, remaining mango, chia seeds and vanilla. Purée until smooth.
- Divide mixture among 4 (1-cup) jars or pour into 1 large container. Cover and refrigerate for 5 hours or overnight. To serve, top with flaked coconut and reserved mango chunks.
