These chocolate peanut butter Easter eggs get their crunch from puffed rice cereal.
Ingredients
- 1 cup creamy peanut butter
- 2 cups confectioners' sugar
- ¼ cup butter, melted
- 1 cup puffed rice cereal
- 3 cups semisweet chocolate chips
- ¼ cup pastel-colored sprinkles
Steps
- Mix together the peanut butter, confectioners sugar and 3 tablespoons butter until smooth. Fold in the cereal and knead with hands until it forms a dough. Form the mixture into 18 egg shapes.
- Add a couple of inches of water to a saucepan and bring to a simmer. Place chocolate chips and remaining butter in a heatproof bowl that just fits over the saucepan (the bottom should not touch the water) and stir until chocolate melts.
- Use a fork to dip each egg in the melted chocolate to coat and set on a wax paper-lined baking sheet. Decorate with sprinkles. For best results, chill at least 1 hour before serving.
