Grilled corn gets a savory upgrade with crispy bacon, ranch-seasoned butter, Parmesan and chives. It’s easy, indulgent and made for summer cookouts.
Ingredients
- 6 slices bacon
- 2 tsp. ranch seasoning mix
- 4 Tbsp. unsalted butter, room temperature
- 6 fresh corn cobs, husks on
- ½ cup grated Parmesan cheese
- 2 Tbsp. chopped fresh chives
- Ranch dressing, for drizzling (optional)
Steps
- Set grill to medium-high and grease grill grates. On a paper towel-lined large plate, arrange bacon slices. Cover with another layer of paper towels. Microwave 3–4 minutes, until crispy. Cool slightly, then chop or crumble bacon into small pieces.
- In a small bowl, mix together ranch seasoning and softened butter. Season with salt and pepper. Set aside.
- Gently peel back corn husks halfway, without removing them. Remove and discard silk strands, then fold husks back up around cobs. Place corn on grill and cook until tender and lightly charred on all sides, turning occasionally, 13–15 minutes.
- Pull husks back. Brush corn generously with ranch butter. Sprinkle with Parmesan, bacon and chives. Top corn with a light drizzle of ranch dressing, if desired.
