This hearty bean salad is loaded with onion, tomatoes, cilantro, jalapeños and cumin, with lime juice and red wine vinegar adding bright, tangy balance. Great as a picnic side or light lunch.
Ingredients
- 1 red onion
- 2 large tomatoes
- ½ cup fresh cilantro
- 3 jalapeños
- 3 cloves garlic
- 3 (15 - oz.) cans black beans, drained and rinsed
- 2 Tbsp. lime juice
- 1 Tbsp. red wine vinegar
- 1 ½ tsp. ground cumin
- 1 tsp. kosher salt
- ¼ cup olive oil, plus more as needed
Steps
- Finely chop red onion, tomatoes and cilantro. Drain any excess liquid from tomatoes. Seed and dice jalapeños. Mince garlic.
- In a large bowl, combine black beans, red onion, tomatoes, cilantro, jalapeños and garlic. Add lime juice, vinegar, cumin and salt. Drizzle in oil and mix to combine, adding more oil if salad is dry.
