This versatile marinade will help you grill up delicious, flavorful meals all summer long. Soy sauce, Worcestershire, vinegar, brown sugar and spices create a savory-sweet mix that works with everything from chicken and shrimp to tofu and vegetables.
Ingredients
- ¾ cup olive oil
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. packed light brown sugar
- 1 Tbsp. reduced-sodium soy sauce
- 1 Tbsp. Worcestershire sauce
- 2 tsp. smoked paprika
- 1 tsp. ground cumin
- 1 tsp. garlic powder
- ¼ tsp. cayenne pepper (optional)
Steps
- To a bowl or jar, add oil, apple cider vinegar, brown sugar, soy sauce, Worcestershire sauce, paprika, cumin, garlic powder and cayenne pepper, if using. Season with salt and pepper. Whisk or seal and shake to combine. Store in an airtight container in the fridge for up to 5 days.
- Use marinade to coat your protein and veggies: pour over chicken, shrimp, tofu, pork or vegetables, toss to coat, and refrigerate 2–24 hours (on the shorter end for lighter proteins and vegetables, and longer for thicker cuts). For skewers, thread marinated pieces onto skewers before grilling so they cook evenly. Reserve a small amount of marinade to brush on as a glaze during the last few minutes of grilling.
- Optional: To make easy chicken and vegetable skewers, set the greased grill to medium-high. Thread 1 lb. marinated chicken and vegetable pieces, such as peppers and onions, onto skewers. Grill skewers until chicken is browned and cooked through and vegetables are tender and lightly charred, about 7 minutes on each side. Garnish with chopped chives.
