This feel-good, protein-packed vegetarian pasta is made with cottage cheese blitzed with peas, garlic and lemony flavors. Choose a pasta shape with ridges, like radiators or rotini, to catch the deliciously creamy sauce.
Ingredients
- ¾ (16 - oz.) box radiatore or rotini pasta
- 1 (16 - oz.) bag frozen peas
- 1 lemon
- 1 cup whole milk cottage cheese
- 2 cloves garlic, roughly chopped
- ¼ tsp. crushed red pepper (optional)
Steps
- Bring a large pot of salted water to a boil. Cook pasta according to package directions. Reserve 1 cup pasta water, then drain pasta.
- Meanwhile, microwave peas according to package directions. Into a food processor, grate 2 teaspoons zest from lemon and squeeze 2 tablespoons juice. Add cottage cheese, half of peas, garlic and crushed red pepper, if using. Season with salt and pepper. Pulse until smooth.
- Return cooked pasta to pot, add remaining peas and heat over medium. Add cottage cheese mixture and toss to combine. If pasta is too dry, add ¼ cup pasta water and toss to coat, adding more if needed. Season with salt and pepper and serve immediately.
