Ingredients
- 2 ½ cups long-grain instant brown rice
- 1 Tbsp. vegetable oil
- 6 oz. white mushrooms, stemmed and quartered
- ½ cup chopped red onion
- 1 (15 - oz.) jar Taste of Inspirations® Butter Chicken Simmer Sauce
- 2 ½ cups shredded rotisserie chicken
- ¼ cup chopped fresh cilantro, plus more for serving
- 8 oz. broccoli florets, steamed, for serving
- Lime wedges and light sour cream, for serving
Steps
- Prepare rice according to package instructions.
- Meanwhile, heat oil in a large nonstick skillet over medium-high until shimmering. Add mushrooms and onion and cook, stirring occasionally, until softened and lightly browned, 5 to 7 minutes.
- Stir in sauce and bring to a simmer. Gently fold in chicken and cook until just heated through, about 2 more minutes, then remove skillet from heat and stir in cilantro. Divide rice, chicken mixture, and broccoli among plates and serve with sour cream, lime wedges, and more cilantro.
