Made with whole wheat flour and packed with nuts, cinnamon and grated carrot and apple, this quick bread is wholesome, moist and perfect for breakfast or snacking.
Ingredients
- Cooking spray
- ¾ cup unsweetened applesauce
- 1 tbsp apple cider vinegar
- 2 large eggs
- ⅓ cup olive oil
- ½ cup packed light brown sugar
- 2 tsp vanilla extract
- 1 ½ cups whole wheat flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- 1 large carrot, peeled
- 1 large apple, peeled
- ½ cup unsweetened coconut flakes
- ½ cup pecans or walnuts, chopped, plus more for topping
- ½ cup raisins
Steps
- Preheat oven to 350°F. Grease a 9x5” loaf pan with cooking spray. In a large bowl, whisk together applesauce and vinegar. Add eggs, oil, sugar and vanilla. Whisk to combine. In a separate bowl, combine flour, baking powder, baking soda, salt and cinnamon.
- Add flour mixture to egg mixture, stirring until just combined (do not overmix). Using the large holes of a box grater, grate carrot and apple, making about 1 cup each. Add grated carrot and apple along with coconut flakes, nuts and raisins. Fold gently to combine.
- Pour batter into prepared pan. If desired, sprinkle top with more chopped nuts. Bake until toothpick inserted in center comes out clean, 50 to 55 minutes, tenting with foil if top begins to brown too quickly. Let bread cool 10 minutes in pan, then transfer to a wire rack to cool completely.
