This bright, creamy pasta comes together in just 20 minutes and features a tangy, lemon-infused cottage cheese sauce. It’s a fresh, satisfying twist on a classic Italian favorite.
Ingredients
- 12 oz spaghetti or fettuccine pasta
- ½ lemon
- 1 cup cottage cheese
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- 2 tbsp chopped parsley or basil
Steps
- Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Drain pasta, reserving 1 cup pasta water. Return pasta to pot or large serving bowl.
- Meanwhile, into a blender or food processor, grate zest from lemon and squeeze juice. Add cottage cheese, Parmesan and oil. Season with salt and pepper. Blend until smooth and creamy. If sauce is too thick, add some reserved pasta water to achieve desired consistency.
- Pour sauce over pasta. Toss pasta with sauce, adding more pasta water as needed, until well-coated and creamy. Garnish with parsley or basil and serve immediately.
