These smash burgers pack big flavor with minimal effort. Sear the patties in a hot skillet for crispy edges, and finish with fried onions for a satisfying crunch.
Ingredients
- 1 ¼ lbs. 80% lean ground beef
- 4 slices American cheese
- 4 Tbsp. store-bought barbecue sauce
- 4 hamburger buns
- ½ cup crispy fried onions
- Lettuce, onion and tomato slices, to serve (optional)
Steps
- Set grill or grill pan to medium-high. Divide the beef into 8 equal balls. Set a 12-inch cast-iron skillet on grill or stovetop. Add 4 balls of meat and, using a metal spatula (or the bottom of a skillet), press down on each ball for at least 10 seconds to form a patty.
- Season burgers with salt and pepper. Continue to cook 1–2 minutes more, until the juices start to bubble. Using a metal spatula, flip burgers, scraping up any caramelization on bottom of pan. Divide 1 slice of cheese between 2 burgers in pan. Cover pan with a baking sheet and continue to cook 1–2 minutes more, until cheese melts. Place the other 2 burgers in pan on top of cheeseburgers. Repeat with remaining beef and cheese.
- To assemble, spread 1 tablespoon barbecue sauce onto each bun. Add smash burgers and top with crispy fried onions. Serve with lettuce, tomato and onion slices, if using.
