Some freezer aisle favorites—frozen spinach and puff pastry—and ready-to-heat mashed potatoes make these five-ingredient knishes quick and easy.
Ingredients
- 1 (10 oz) pkg frozen spinach, thawed
- ½ (24 oz) pkg garlic mashed potatoes or 1 ½ cups leftover mashed potatoes
- 3 cloves garlic, minced
- 1 (17 oz) pkg puff pastry, thawed
- 1 large egg, lightly beaten
Steps
- Preheat oven to 400°F. Line a rimmed baking sheet with parchment. Transfer the thawed spinach to a colander and squeeze with your hands to remove any excess liquid. Transfer to a large bowl. Add the mashed potatoes and garlic, stirring to combine. Season with salt and pepper.
- On a lightly floured surface, roll 1 puff pastry sheet to a 14x12-inch rectangle. Cut in half lengthwise. Leaving a 1-inch border, spoon ¼ of potato filling along the length of each piece of puff pastry. Shape filling into a log about 13 inches long. Brush the border with egg wash. Fold puff pastry over filling, pinching seams to seal. Arrange seam-side down on prepared baking sheet. Repeat with remaining puff pastry sheet and filling.
- Brush tops of pastry with remaining egg wash. Bake 30–35 min., until pastry is golden brown. Let stand 10 min., then cut into 2-inch pieces on the diagonal.
