Transform leftover Thanksgiving stuffing into these savory waffles, perfect for a quick dinner or an easy brunch.
Ingredients
- 3 cups leftover stuffing
- ¼ cup unsalted chicken broth
- 2 tbsp finely chopped fresh chives, plus more to garnish
- 6 large eggs, divided
- Cooking spray
Steps
- In a large bowl, combine the stuffing, broth, chives, and 2 eggs. Season with salt and pepper.
- Grease a waffle iron with the cooking spray and preheat on medium. Spoon one-quarter of stuffing mixture into waffle iron (about ¾ cup) and close iron. Cook 4–5 min., until waffle is golden brown and crispy. Transfer to a plate. Grease waffle iron again and repeat with remaining stuffing mixture.
- Meanwhile, coat a 12-inch nonstick skillet with cooking spray and heat on medium-high. Add remaining 4 eggs. Cook 1–2 min., until whites are mostly set. Cover skillet and cook 2 min. more, until yolks reach desired doneness. Season with salt and pepper. Top each waffle with a fried egg. Garnish with more chives, if desired, before serving.
