Store-bought stuffing mix adds great flavor to this one-bowl, easy 5-ingredient meatloaf slathered in barbecue sauce. Turn any leftovers into meatloaf sandwiches.
Ingredients
- 1 large onion
- 1 (1.2 lb) pkg ground meatloaf mix
- ½ (6 oz) pkg chicken stuffing mix
- 2 large eggs
- ¼ cup plus 2 tbsp barbecue sauce, divided
Steps
- Preheat oven to 400°F. Line a rimmed baking sheet with parchment. Peel the onion. Place a box grater in a large bowl. Using the coarse side of grater, grate onion.
- Add the meatloaf mix, stuffing mix, eggs, and ¼ cup barbecue sauce to bowl and mix gently to combine. Season with salt and pepper. Transfer meat mixture to prepared baking sheet and shape into a loaf.
- Brush the top of loaf with remaining 2 tbsp barbecue sauce. Bake 45–50 min., until the internal temperature is 165°F. Let cool slightly, then cut meatloaf into slices.
