This super-fast spiced-beef flatbread is the perfect easy dinner when you need a hearty meal in under 20 minutes. A quick yogurt and tahini sauce is spread on warm naan, topped with beef, and garnished with cucumbers and fresh mint.
Ingredients
- 1 tbsp olive oil
- 1 lb 90% lean ground beef
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp sweet paprika
- ½ tsp ground coriander
- ½ cup plain low-fat Greek yogurt
- ¼ cup tahini or hummus
- ½ English cucumber
- 8 mini or 4 regular-size naan flatbreads, warmed
- ¼ cup mint leaves, to garnish
- ¼ cup sliced red onion, to garnish (optional)
Steps
- In a 12-inch skillet, heat the oil on medium. Add the beef and season with salt and pepper. Cook 8–10 min., until beef is browned, breaking up the meat with the back of a wooden spoon. Stir in the garlic, cumin, paprika, and coriander. Cook 30 sec., until fragrant
- In a medium bowl, combine the yogurt and tahini. Season with salt and pepper. Using the coarse side of a box grater, grate the cucumber.
- Divide the yogurt mixture among the naan. Top with the beef mixture, cucumber, mint, and onion, if desired.
