This quick Vietnamese salad is a great no-cook dinner or lunch. The salad combines fresh veggies, a tangy lime dressing, and chopped beef jerky with peanuts and basil for extra flavor and crunch.
Ingredients
- 2 cloves garlic, minced
- 1 tsp sugar
- ¼ cup fresh lime juice
- 2 tbsp fish sauce or reduced-sodium soy sauce
- 2 plum tomatoes
- 1 (10 oz) bag Nature's Promise ® Organic Green Beans
- 1 (10 oz) bag Nature's Promise ® Organic Vegetable Slaw
- 1 (2.5 oz) pkg Country Archer ® Beef Jerky, such as Original or Mango Habanero
- ¼ cup sliced basil leaves
- ¼ cup finely chopped peanuts
Steps
- In a large bowl, whisk the garlic, sugar, lime juice, and fish sauce until sugar dissolves.
- Core the tomatoes and coarsely chop. Cut the green beans into 1-inch pieces. Add tomatoes, green beans, and the vegetable slaw to bowl with dressing. Season with salt and pepper and stir to combine. Let stand at room temperature 10 min.
- Meanwhile, chop the beef jerky into ½-inch pieces. Before serving, add the basil, peanuts, and beef jerky to the salad and toss to combine.
