Precooked quinoa and store-bought hummus make short work of building a delicious hummus bowl for a quick lunch or an easy dinner. Serve pitas on the side to scoop up every bite.
Ingredients
- 1 (8.8 oz) pkg Nature's Promise® Precooked White Quinoa
- 1 pint grape tomatoes
- 1 English cucumber
- ½ small red onion
- 2 tbsp olive oil, divided
- 1 tbsp red wine vinegar
- 2 cups shredded cooked or rotisserie chicken
- 1 tbsp garam masala or curry powder
- 1 (8 oz) pkg Nature's Promise® Traditional Hummus
- Pitas, to serve (optional)
Steps
- Microwave the quinoa according to package directions. Meanwhile, halve the tomatoes and chop the cucumber and onion. In a medium bowl, combine vegetables, 1 tbsp oil, and vinegar. Season with salt and pepper.
- In a microwave-safe bowl, combine the chicken, garam masala, and remaining 1 tbsp oil. Season with salt and pepper. Microwave until warm, 1–2 min.
- Divide the quinoa among 4 bowls. Top each with a dollop of the hummus. Top with tomato salad on one side of each bowl and chicken on the other side. Serve with the pitas, if desired.
