Quick and affordable, this easy, creamy pasta that relies on frozen peas and cottage cheese is ready in just 20 minutes.
Ingredients
- 1 (12 oz) box radiatore or rotini pasta
- 1 (16 oz) bag frozen peas, thawed
- 1 cup 1% milkfat cottage cheese
- 2 tsp lemon zest
- 2 cloves garlic
- ¼ tsp crushed red pepper (optional)
Steps
- Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Reserve ½ cup pasta water, then drain pasta.
- Meanwhile, microwave the peas according to package directions. To a food processor, add the cottage cheese, half of peas, lemon zest, garlic, and crushed red pepper, if using. Season with salt and pepper. Pulse until smooth.
- Return cooked pasta to pot, add remaining peas, and heat on medium. Add cottage cheese mixture and toss to combine. If pasta is too dry, add ¼ cup pasta water and toss to coat, adding more if needed. Season with salt and pepper.
