A new way to do Taco Tuesday! All the classic taco flavors come together in a hands-off and family-friendly one-pot recipe.
Ingredients
- 1 (32 oz) pkg low-sodium beef broth
- 3 cups water
- 1 lb Shady Brook Farms ® Ground Turkey
- 1 medium onion, chopped
- 1 red bell pepper, seeded and chopped
- 1 (15.5 oz) can light red kidney beans, drained and rinsed
- 3 cloves garlic, minced
- 1 (8 oz) can tomato sauce
- ½ (1 oz) packet low-sodium taco seasoning
- 2 tsp chili powder
To Garnish (Optional):
- Tortilla chips
- Sour cream
- Shredded Cheddar cheese
- Chopped cilantro
Steps
- In large heavy-bottom pot or Dutch oven, bring the broth and water to a boil. Add the ground turkey, breaking up with wooden spoon.
- To pot, add the onion, bell pepper, beans, garlic, tomato sauce, taco seasoning, and chili powder. Season with salt and pepper. Reduce heat to medium-low and partially cover. Simmer 1–1½ hours, until liquid is reduced by half and taco soup is at a desirable consistency, stirring occasionally.
- Ladle soup into bowls and garnish with the green onions, tortilla chips, sour cream, cheese, and cilantro, if desired.
