Even faster than delivery, this slow cooker version of a takeout favorite is ready as soon as you walk in the door. Just add the ingredients before you head out for the day.
Ingredients
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 (1 inch) piece ginger, minced
- 1 (1.5 lb) pkg boneless, skinless chicken breasts
- 1 (13.5 oz) can unsweetened coconut milk
- 3 tbsp tomato paste
- 3 tbsp curry powder
- 2 tsp paprika
- 1 tsp chili powder
- 1 tbsp lime juice
- 2 (8.8 oz) pkgs Nature's Promise® 90 Seconds Brown Rice
- Chopped cilantro, to serve
Steps
- To a 6-qt. slow cooker, add onion, garlic, and ginger. Cut chicken into 1" pieces and add to slow cooker.
- In a large bowl or measuring cup, combine coconut milk, tomato paste, curry powder, paprika, chili powder, and lime juice. Season with salt and pepper. Whisk to combine, then pour over chicken in slow cooker. Cover and cook until tender, on low 6 to 7 hours or high 4 hours.
- Cook rice according to package directions and divide among bowls. Divide curry over rice. Serve with chopped cilantro.
