Ingredients
- 1 (16 oz) large raw shrimp, thawed
- clove garlic, minced
- 1 tbsp lemon juice
- ⅔ cup Taste of Inspirations® Pesto Sauce, divided
- 3 medium tomatoes
Steps
- Set grill or large grill pan to medium-high. In a large bowl, toss shrimp with garlic, lemon juice, and ⅓ cup pesto until well coated.
- Place shrimp on grill and grill 1 to 2 minutes per side, until cooked through. Thinly slice tomatoes. Serve shrimp with tomatoes, drizzled with remaining ⅓ cup pesto.
