Salmon gets crispy in the air fryer with this speedy preparation. Have lunch or dinner ready in just 15 minutes with this easy recipe.
Ingredients
- 6 baby bok choy, quartered
- 1 tbsp sesame oil
- 1 (1 lb) salmon fillet, skin removed
- 1 tbsp brown sugar
- 1 tbsp chili powder
- ½ tsp ground ginger
- Cooking spray
- 1 (15.9 oz) pkg Nature's Promise® Precooked Brown Rice
- ¼ cup teriyaki marinade
- Sesame seeds, for garnish
Steps
- Preheat air fryer to 400°F. In a large bowl, toss the bok choy with the sesame oil. Season with salt and pepper. Transfer to air fryer basket. Cook 5 min., until tender. Meanwhile, cut the salmon into 1-inch pieces and add to large bowl. Add the brown sugar, chili powder, ground ginger, salt, and pepper. Toss to coat salmon pieces.
- Remove bok choy from air fryer basket. Spray air fryer basket with the cooking spray. Add salmon to basket. Cook 5–7 min., until salmon is fully cooked, tossing halfway through.
- Meanwhile, microwave the rice according to package directions. Divide rice among 4 bowls. Top with bok choy and salmon bites. Drizzle 1 tbsp teriyaki marinade over each bowl. Garnish with the sesame seeds.
Tips
Can’t find bok choy? Substitute with 1 lb broccoli florets.
