Inspired by chicken satay, using rotisserie chicken, precooked rice, and store-bought peanut dressing keeps this recipe under 15 minutes.
Ingredients
- 1 (12 oz) pkg broccoli slaw
- 8 tbsp Nature's Promise® Thai Peanut & Honey Dressing, divided
- 1 (15.9 oz) pkg Nature's Promise® Precooked Brown Rice
- ¾ cup shelled edamame
- 2 cups shredded cooked chicken
- 1 jalapeño, sliced (optional)
- ¼ cup chopped cilantro (optional)
- 2 tsp sesame seeds
Steps
- In a medium bowl, combine the broccoli slaw with 4 tbsp peanut dressing. Microwave rice according to package directions. Divide rice among 4 bowls.
- Evenly divide the edamame, broccoli slaw mixture, and chicken among bowls. If desired, add jalapeño and cilantro to each bowl. Drizzle bowls with remaining 4 tbsp dressing and garnish with the sesame seeds to serve.
