This fun twist on a classic bellini features a vibrant fruity purée made with both raspberries and peaches. Topped off with a bottle of bubbly, it’s perfect for brunch or any occasion that calls for a festive toast.
Ingredients
- 1 (12 oz) pkg frozen red raspberries, thawed
- ½ (16 oz) pkg frozen sliced peaches, thawed
- 1 tbsp lime juice
- 1 (750 ml) bottle sparkling wine, chilled
Steps
- To blender, add raspberries, peaches (plus any juices from fruit) and lime juice. Purée until smooth. Press through a fine-mesh strainer into a serving pitcher, discarding any solids. Refrigerate mixture until cold, at least 30 min.
- To serve, add the wine to pitcher and stir to combine. Serve in flutes.
Tips
For an extra flourish, garnish with fresh raspberries.
