Ingredients
- 1 (10 oz) box couscous
- 1 tbsp olive oil
- ½ cup pre-diced peppers
- 1 lb ground beef
- 1 tbsp cumin
- 1 tsp cinnamon
- 2 tsp smoked paprika
- ½ tsp ground turmeric
- 1 (15.5 oz) can chickpeas, drained and rinsed
- ¼ cup chopped fresh parsley
Steps
- Prepare the couscous according to package directions.
- In a 10-inch skillet, heat the oil on medium-high. Add the peppers, beef, cumin, cinnamon, paprika, and turmeric. Season with salt and pepper. Cook the ground beef 8–10 min., until browned, breaking up with the back of a wooden spoon.
- Add the chickpeas to the skillet. Cook 2–3 min., until chickpeas are warmed, stirring often. Serve chickpea mixture over couscous. Garnish with the parsley.
